Aloo Chaat / Baby Potatoes Chaat Recipe

                              

 Aloo Chaat is a lip smacking dish made using deep fried crispy potatoes coated in flavorful spices, tangy spicy sauces and seasoned yogurt. Aloo Chaat is one of the famous street foods of India. Delhi's aloo chaat is very popular. Here, I have made a healthy version using just 2 tablespoon oil and have used baby potatoes to make this chaat. You can serve Aloo chaat as evening tea-time snack or as a party starter / appetizer. The recipe is Onion garlic free and easy to follow.

                   

What is a Chaat?

A chaat is a tongue-tickling snack, and a popular Indian street food. Chaat originated in the Indian state of Uttar Pradesh, however, it gained popularity in the rest of the Indian Subcontinent. The word chaat means to lick in Hind language. So basically a chaat is a preparation which is finger-licking good.  The delicious Dates and Tamarind Chutney and the Spicy green chutney along with some spice powders contribute to the spicy tangy and sweet flavors of a chaat. I usually keep these chutneys handy in my refrigerator. If you do no have them in stock, I would suggest you make them a day ahead before you intent to make the chat, to save time.

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves:2

Ingredients:
  • 500 grams Baby Potatoes
  • 1/2 cup curd
  • 1/4 cup Pomegranate Arils
  • 1/4 cup Sev
  • 1/2 teaspoon chaat masala
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon Roasted Cumin Coriander powder
  • Salt to taste
  • 2 tablespoon Oil
  • 1 tablespoon sugar 
  • 1/4 cup fresh coriander
  • Tangy Tamarind Dates chutney as per need
  • Spicy Green Chutney as per need
Method:
  1. Wash the baby potatoes thoroughly under running water and pat dry using kitchen towel.
  2. Cook the potatoes either in a steamer or pressure cooker such that they are not over cooked. 
  3. Cut them into halves or in chunks (if using regular potatoes) . You may peel the potatoes or leave the peel on, the way i did.
  4. Next, heat 2 tablespoon oil in a pan and add boiled potato chunks to it. Fry the potatoes on medium to high flame, until it becomes nice crispy and golden brown from all sides. Alternatively you may bake or air-fry the potatoes.
  5. Now, lower the flame and add spice powders , red chili powder, cumin coriander powder and salt to taste and saute the potatoes on low flame for 1-2 minutes so that they coat well in spice powders.
  6. Our flavorful crispy potatoes are ready.
  7. Add sugar and salt to taste to the curd and whisk it well until creamy. Preferably use chilled curd. If you want to skip adding curd, you may add lemon juice, but frankly speaking there is no replacement for curd.
  8. Add the potatoes to the serving plate. Drizzle curd over the potatoes.
  9. Drizzle the chaat chutneys as per liking.
  10. Sprinkle chaat masala over the chaat. 
  11. Top the aloo chaat with pomegranate arils, sev and coriander and serve immediately.

Homemade Cheese Powder

                            

This homemade cheese powder is an excellent flavorful topping for your popcorn, pasta , chips or snacks. With a very simple recipe to follow,  you can easily make a spiced cheese powder at home and add a wonderful cheesy flavor to your food.                                                                                                                                                                                                                                       

Steps in making Cheese powder at home: Cheese powder can be made at home in 2 ways, the 1st one being dehydrating thin sheets of cheese and then grinding them using coffee grinder. The second method is to simply grate processed cheese and allow the grated cheese to air-dry. Once it is completely dried, transfer it to grinder jar along with Italian seasonings. In this recipe, i have followed the second method.

What goes into my version of Homemade Cheese Powder ? The Ingredients:

  • Processed Cheese: The first obvious ingredient is cheese. You can use any cheese variety like, Mozzarella or cheddar to make cheese powder. I have simply used Amul processed cheese cubes. 
  • Cornflour: Little amount of cornflour is used which keeps the cheese powder non-sticky and dry.
  • Spices and Herbs: Red Chili flakes , Dried Oregano, Black Pepper powder are used as flavorants.
  • Salt to taste and a bit of powdered sugar to balance the flavors.
  • Turmeric powder adds a lovely color to the cheese powder.

  • Kid Friendly
  • Topping for chips, popcorn , snacks
  •  Can be used in Pasta,pizza,bread dough for the cheesy flavor

Our host for the month of April was Jayashree  Rao and she suggested that we share recipes of homemade spice mix. In this group, participating members are grouped into pairs and they exchange a set of secret ingredients.with their assigned partner for the theme. My partner for the theme was Priya VJ who blogs @Sweet Spicy Tasty. She gave me black pepper and oregano as my secret ingredients, using which I made this Cheese powder. In return, I gave her red chilies and coriander seeds and she prepared a flavorful and aromatic Sundal Podi with it. Preparation Time: 3 hours
Cooking Time: Nil
Serves: 1/2 cup cheese powder

Ingredients:
  • 5 cubes of Amul Processed Cheese
  • 2 tablespoon of cornflour
  • 1 teaspoon oregano
  • 1 teaspoon dried red chili flakes
  • 1/2 teaspoon black pepper corn
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon powdered sugar
  • Salt to taste
Method:
  1. Grate the processed cheese cubes and spread it in a thin layer on board/
  2. Allow it to air-dry in shade under fan for around 3 hours.
  3. Once it is nice dry and non-sticky, transfer it to a grinder jar or coffee grinder along with other ingredients and pulse to get a fine powder.
  4. Store it in an air-tight container and use as required.

Lachha Onion Salad / Dhaba Style Masala Pyaz

                               

Lachha Onion Salad is basically a simple spiced Onion salad, where in rings of onions are seasoned with lemon juice, spice powders and salt. Lachha Onion salad is also called masala pyaz and is served in many road side eateries (dhabas) and restaurants as condiment or side dish with starter dishes like Tikkas, and pairs well with rice dishes like pulaos and biryanis. 

                                   

What goes into my version of Lachha Onion Salad / Masala Pyaz : The Ingredients:

Onions: Onion is the key ingredient of this salad. Use large onions, that are less pungent to make this salad. Larger rings of onions make the salad look more appealing. 

Lemon juice: lemon juice not only ads a refreshing tangy taste to the salad, but also helps the spice powders stick well to the onion rings.

Spice Powders; I have used Kashmiri red chili powder, crushed black pepper corn, Chaat masala and Dry mint (Pudina) Powder along with salt in this salad.

Green chilies and fresh Coriander : Finely chopped deseeded green chilies for the spicy kick and fresh coriander for the refreshing taste.

I like such fuss-free healthy salads that do not require any fancy ingredients, yet are very flavorful and can be put together in no time. One such salad recipe from Priya's space is  Som Tam Recipe / Thai Green Papaya Salad , that is next on my to-do-list.


Dietary Notes: This Lachha Onion Salad is
  • A spicy Onion Condiment
  • Oil-free salad
  • Flavorful side dish with starter dishes
  • Guilt-free, fuss-free veg salad
  • Dhabba style masala pyaz
  • Pairs well with rice dishes like Pulao and Biryani

Preparation Time: 5 minutes
Cooking Time: Nil
Serves: 4

Ingredients for Lachha Onion Salad
  • 4-5 large red onions, peeled and sliced, rings separated
  • 2 green chilies, deseeded and finely chopped
  • Juice of 2 lemons
  • 1/2 teaspoon Kashmiri red chili powder
  • 1/2 teaspoon dry mint powder
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon powdered sugar (optional)
  • Salt to taste
  • Finely chopped fresh coriander leaves
Method:
  1. Peel, wash and slice the onion, such that, you get large circular rings. Separate the onion rings delicately from each onion slice, taking care not to break the rings.
  2. In a large mixing bowl, transfer these onion rings.
  3. Add red chili powder, freshly crushed black pepper corn, dry mint powder, chaat masala, powdered sugar (if using) and salt to taste.
  4. Add green chilies and finely chopped coriander leaves.
  5. Add lemon juice and mix all the ingredients well using your hands.
  6. Serve the flavorful spicy lachha Onion salad with starter dishes or rice dishes of your choice.
