Sweet Corn bhel is a lip-smacking snack and a popular Indian street food. Call it a chaat or a salad, this corn bhel is a flavorful and appealing with healthy goodness of sweet corn and vegetables.The recipe is very simple and calls for tossing boiled sauteed sweet corn kernels,boiled potatoes, onion ,tomato,and pomegranate with lemon juice,sweet and sour Khajur Imli /Dates and Tamarind Chutney and spicy and flavorful Coriander Chutney. The chaat is further seasoned with a blend of Indian spice powders, salt and garnished with fine Sev and fresh coriander leaves. Result is an irresistible snack that can serve as a quick evening snack for unannounced guests or to satisfy those spicy savory cravings !
I have used fresh corn kernels which are easily available here with vegetable vendors but you can make this chaat using fresh corn cobs too. All you have to do is, cook the corn cob in a pressure cooker for 2 whistles and run a knife vertically to separate the kernels. If you have both the Dates Tamarind Chutney and Coriander Chutney, ready at hand,making this flavorful snack is a breeze. I always have a batch of both these chutneys in my refrigerator. If you do not have, i would suggest you make the chutneys a day ahead to cut down the time. I have provided the links to the recipes of both the chutneys. So lets get started.

Cooking time: 5 minutes
Servings : 3-4
Ingredients :
- 1 cup sweet corn kernels
- 1 red onion finely chopped
- 1 tomato , de-seeded and finely chopped
- 1 boiled potato , peeled and cubed
- 1 tablespoon lemon juice
- 1/4 cup pomegranate arils
- 2 tablespoon finely chopped coriander leaves
- 2 teaspoon butter / olive oil
- 1 tablespoon Coriander Chutney
- 1 tablespoon Khajur Imli (Dates Tamarind)Chutney
- 1 teaspoon chaat masala
- 1/2 teaspoon freshly crushed black pepper
- 1/4 teaspoon Sev (bhujiya) for garnishing
- Salt to taste
Method:
- Rinse the sweet corn kernels and boil them in 2 cup water for 4-5 minutes either in an open vessel or in a microwave. If using fresh corn cobs, boil them in pressure cooker for 2 whistles and remove the corn kernels by running the knife vertically.
2. Heat butter or olive oil in a pan and add onions to it. Remove them once they sweat. Now add the boiled kernels and saute them in the same pan for 1-2 minutes.Take out the kernels in a mixing bowl. Add boiled potato cubes, sauteed onion, tomato, pomegranate , coriander leaves and toss well.
3. Add the dates and tamarind chutney, green chutney, chaat masala, lemon juice ,crushed black pepper and salt to taste. Blend everything very well. To a taste test and add more seasonings if required.
4. Remove it in a serving plate and garnish with sev , coriander leaves and pomegranate arils . Serve immediately.
Recipe Notes:
- I have made this chaat using sweet corn kernels which are readily available here with vegetable vendors, If using fresh corn cobs, boil them in pressure cooker for 2 whistles and remove the corn kernels by running the knife vertically.
- Here, i have added boiled potatoes, onion, tomato , coriander leaves and pomegranate , you may add chopped cucumber, raw mango pieces, roasted peanuts as well if you prefer.
- Add the sev to the chaat just before serving or else it will become soggy and spoil the taste of the chaat.
- You can skip sauteing the onions and boiled corn and make this chaat oil free.
- I would suggest you to make both the Dates and Tamarind Chutney and the Coriander Chutney one day before making this chaat for the ease and to save time.
