Sweet Corn Vegetable Soup

Sweet Corn is one of the finest sources of dietary fibers , 100 g kernels carry 2 g or 5% of daily-requirement of dietary - fiber. It is also a good source of phenolic flavonoid antioxidant, Ferulic acid , some of the valuable B- complex group of Vitamins and contains healthy amounts of some important minerals like Zinc , Magnesium , Copper, Iron , and Manganese. Cooked Sweet Corn increases levels of Feluric acid , which has anti- cancer properties.

Sweet Corn Kernels are tender , delicious and eaten as a vegetable in many cuisines worldwide. They are favourite in my house and i add them in my dry vegetable preparations , Upmas , Uttapas , masala Oats , daliya and even Khichadi apart from enjoying as summer salads and salsas. My son relishes buttery sweet corn kernals as evening snacks. Today i am sharing the recipe of a delicious and healthy soup using Sweet corns and mixed vegetables.

 Sweet Corn vegetable soup is a popular soup from the Indo-Chinese cuisine. This simple yet flavorful soup is packed with healthy goodness of vegetables. There are many ways of making this soup, either clear or creamier.Here i am sharing a simple version of a creamy sweet corn soup using fresh American corn. Usually corn starch is added in this soup as a thickener, but i have made this soup without using any thickener.I have used Carrot , French beans , Ginger and Onion in this soup, you may add Green Peas , Spring Onion or Cabbage or any other vegetables of your choice , or those which are available . Also the use of vegetable stock makes the soup more filling and healthier. You may add milk or plane water if vegetable stock is unavailable. This sweet soup is lightly spiced with freshly ground black Pepper. This soup can be given even to toddlers and can be had as a healthy breakfast , along with meals or in between the meals.

  • 1 Corn cob or 1 cup frozen Sweet Corn kernels
  • 1 Onion,  finely chopped
  • 1 small Carrot , finely chopped
  • 3-4 French Beans , finely chopped
  • 1/2 inch Ginger piece finely chopped.
  • 2 cups vegetable stock 
  • 1/4 tsp freshly ground Black Pepper. 
  • 1 tsp Sugar (optional)
  • 1 tbsp Butter
  • Salt to taste 
  1. Boil the sweet corn cobs in a pressure cooker or in an open vessel until cooked. Let them cool down , scrape the corn kernels from the cob. 

  2. In a grinder jar , blend the corn kernels using little water to a smooth paste. 

 3. In a pan heat butter , add ginger followed by finely chopped onion. Saute till the onions become translucent. Now add carrots and beans. Saute for a while. 

 4. Add the corn paste and stir. Now add the vegetable stock , give a quick stir and allow the soup to come to a boil. 

  5. Season the soup with salt , sugar and freshly crushed black pepper. Simmer the soup for 2-3 minutes and put off the flame. 

  6. Serve the soup hot with toasted bread or just as it is .
