Instant Sweet Corn Uttapam / Healthy Breakfast Recipe


For all the sweet corn lovers, here's another easy peasy breakfast option. An instant Sweet Corn Uttapam tastes great and is healthy at the same time. This recipe also works when your day is rushed and where skipping breakfast is not an option.

Sweet corns are my family favourite and so i try to incorporate them in our daily meals. I often use them in salads , chaats , sandwiches and in my masala oats . So when i saw my friend Pina using it in her chilla , i could not resist myself from trying out this recipe.

You do not require overnight soaking and this uttapam is not made from rice either. It is an instant one made from suji. You can add grated carrots and tomatoes also in this recipe. I have used fresh sweet corn as they are in the season, but you may also use frozen ones. So lets quickly have a look at its ingredients and method .

Ingredients:
  • 1 cup Suji / Semolina
  • 1 cup fresh Sweet Corn kernels
  • 2 Onions
  • 2 Green Chilies
  • 1 tsp Cumin seeds
  • 1/2 inch Ginger piece
  • 1/4 cup fresh coriander leaves
  • Salt to taste
  • 2-3 tbsp of Oil
Method:
  1. Take Suji in a bowl and add some warm water to it and soak for at least 10 minutes. 

   2. Meanwhile , grind the Sweet corn kernels along with Onions, green Chilies, Cumin seeds, Ginger and Salt using a grinder. You may add some water if required.



  3. Add this corn mixture to the soaked Suji and mix well . Do a taste test for salt and add accordingly if required . Add finely chopped coriander leaves to it. Mix it well.


  4. Heat up a non stick pan and drizzle few drops of oil on it. Put this batter on the pan with a laddle and spread it in circular motion. Cover cook this uttapam on a low flame for 2-3 minutes and then flip it. 



  5. Now cook the uttapam from other side also without cover. Remove it in a plate. Cook the rest uttapam also in a similar way. Serve it with sauce , chutney or pickle of your choice. I have served it with Amla Chutney.
