Broccoli Paneer Paratha

                                

Broccoli Paneer Paratha is a delicious stuffed flat bread made from whole wheat flour with spiced broccoli and Indian cottage cheese (paneer) filling. These stuffed  parathas are flavorful and nutritious and serve as a comfort food with raita or pickle or even a dal, actually you can pair them even with a vegetable stir fry or plain curd. They make up for an ideal breakfast or can be packed in kids lunch box or served as an after school snack. The recipe is onion garlic free, very simple and easy to follow .
                       
                               

Broccoli is considered among the world's healthiest foods for its numerous health benefits . It is not only rich in fiber, minerals and vitamins but is also low in calories. I am glad it is a happy veggie in my house and i really do not have to think ways of including it in our daily diet. I make cutlets and stir fries using broccoli , add them in soups, salads and rice dishes . This time i thought why not try stuffing them in our favourite paneer paratha . I added boiled potato to the spiced broccoli and crumbled paneer mix . Boiled potato served as a binder . I made the broccoli paneer paratha for our weekend brunch and paired it with dal , oil free Lemon Pickle and onion Cucumber Raita.

Every alternate month food bloggers who wish to participate in the theme choose key ingredients alphabetically to cook. For this month B is the alphabet and my contribution to the theme is this healthy and delicious Broccoli Paneer Paratha. So lets get started.
                     

Preparation Time:30 minutes
Cooking Time: 20 minutes
Serves: 6

Ingredients for the filling
  • 1 head broccoli, rinsed and grated 
  • 1/2 cup crumbled or grated paneer / Indian cottage cheese
  • 1 boiled potato, pelled and mashed or grated
  • 2 teaspoon oil
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2  inch ginger, grated
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon raw mango powder/ amchur powder
  • Salt to taste
Ingredients for the dough
  • 1 cup whole wheat flour
  • 1/4 teaspoon carom seeds/ ajwain
  • 1 teaspoon ghee
  • Salt to taste
Method:
  1. Take whole wheat flour in a bowl. Add carom seeds, salt and ghee to it. Rub the ghee well with the flour using your finger tips. Now add little water at a time and knead the flour into a semi soft dough. Keep the dough covered for 20 minutes.
                               

                               

2. While the dough is resting, we will prepare the stuffing of the paratha. For that heat oil in a wok on medium heat. Add cumin seeds to it . Allow them to crackle. Now add grated ginger and saute for few seconds.


3. Next add turmeric powder followed by the grated broccoli. Saute for 1-2 minutes on low to medium flame. Add spice powders ( red chili powder, garam masala and raw mango powder) and salt to taste. Give a quick mix and stir fry for another 1 minute. Put off the flame and allow the mix to cool down  in a plate.



4. Add crumbled paneer and boiled potato to the broccoli mixture and blend everything very well.
Our stuffing for the paratha is ready.



 5. Now knead our dough again which is resting for a while now. Make 6 equal portions of the dough. Roll out each dough ball into a disc size. Add 1 tablespoon or a bit more broccoli paneer stuffing in the center of the disc. Gather the sides in the center and seal them. 



6. Roll out the stuffed dough ball delicately on a dusted working surface or board using a rolling pin. Roll out the paratha uniformly taking care the stuffing does not come out while doing so.


7. Place the rolled out paratha on a heated skillet and cook on a low flame , flip it and cook the paratha from both sides well and you see small golden brown spots on the surface.



  8. Remove the paratha on a plate and smear it with ghee or top it with a dollop of butter. Make all the paratha in a similar manner. Serve the delicious broccoli paneer paratha with raita and pickle of your choice.

  9. Stuffed parathas are on the top of my list as lunch items as I can just roll them up and munch on them even in the middle of a busy day.

    This is a new combination for me to try. Moreover, it is a complete meal with the proteins, vegetables, and carbs.
