Mumbai Pav Bhaji Recipe / Indian Street food Recipes


Pav Bhaji is a famous fast food of Maharashtra , specially Mumbai. One can find Pav Bhaji at almost every street corner of Mumbai. A quick snacks which can serve as a filling meal . Pav Bhaji consist of a spicy mix vegetable curry ( Bhaji in Marathi) served with butter toasted Pav Buns.

Pav Bhaji being one of the favourite snacks in my house , i often prepare this dish at home specially during winters, as during this time we get plenty of fresh veggies. A very easy way to make kids eat their veggies. The main vegetables added in the Bhaji are Potatoes, Green Peas, Carrot, Cauliflower , Capsicum, Onions and Tomatoes. One can add French beans and cabbage also. I have added 1/2 medium size Beet root also in the bhaji to give the gorgeous colour to the Bhaji.

Have used fresh green peas to make the Bhaji as it is readily available during this season, you may use the dried green peas also , by soaking them overnight and then boiling. Addition of Beet root is optional, but we get a beautiful color to the bhaji, and that to naturally. Pav Bhaji is often served with salad and lemon wedges .

Ingredients:

  • 2 Potatoes, peeled and roughly chopped
  • 1 large Carrot, peeled and chopped
  • 1/4 cup Cauliflower florets
  • 1/2 cup Green peas
  • 1/2 medium Beetroot, peeled and chopped
  • 1 large Capsicum, de seeded and finely chopped
  • 2 Tomatoes finely chopped
  • 2 Onions finely chopped
  • 2 green Chilies
  • 1/2 inch Ginger
  • 3-4 Garlic cloves 
  • 1 tbsp red chili powder
  • 2 tbsp Pav Bhaji masala
  • 1/4 tsp Turmeric powder
  • 3-4 tbsp Butter
  • 1 tbsp Oil
  • Juice of 1 Lemon
  • Fresh Coriander leaves for garnishing
  • Salt to taste
  • 1/4 cup chopped Onions for garnishing
  • Few lemon wedges and salad of your choice to serve
  • 1 dozen Pav Buns to serve
Method:
  1. Clean , wash and chop the veggies. Cook all the veggies except Onions, Tomatoes and Capsicum with little water and salt in a pressure cooker or in a Microwave. Mash them well and keep aside. Do not puree them. Grind the green chilies, ginger and garlic to paste.




    2. In a wok heat 1 tbsp oil and 2 tbsp butter on a medium heat. Add the green chili, ginger garlic paste and saute well. Now add the chopped onions and saute until translucent. Add the chopped tomatoes.



   3. Once the Tomatoes turn soft and mushy,add the Capsicum . Now add salt ( be careful while doing so, as the veggies already have salt) . Mix well . Add the turmeric powder followed by red chili powder and Pav bhaji masala and mix. Saute the mixture for 1 -2 minute or until oil separates out. 




    4. Now add the cooked and mashed mix veggies . Mix the veggies very well with the masala. Now add l/2 cup hot water and stir the curry.



   5. Let the curry cook on low flame for 3-5 minutes . Now add the remaining butter and mix well. Put off the flame.


    6. Squeeze out juice of 1 lemon into the bhaji and give a quick stir. Garnish with chopped fresh coriander and finely chopped Onions and serve hot with Pav Buns toasted on butter, salad of your choice and lemon wedges. Enjoy the lip smacking Pav Bhaji with your loved ones !!
