Pasta Spirals with Pesto Sauce / Italian Cuisine


Kids generally love Pasta and my son is no exception. He is more than happy to have it as an after school snacks. i generally make pasta with red or white sauce but today i am sharing a very fragrant and classic pasta recipe with home made Pesto sauce :)

Have followed this recipe from the book, best ever Pasta sauces by Linda Fraser. The recipe of Pesto sauce calls for the use of Pine Nuts, but i have replaced them with Walnuts. 


Ingredients: Serves 2
  • 150 gram pasta spirals (fusilli)
  • 25 grams fresh basil leaves, without the stalks
  • 3-4 garlic cloves
  • 2 tbsp Pine nuts / Walnuts
  • 1 tsp freshly ground black Pepper
  • 1/4 cup Olive oil
  • 25 gram freshly grated Cheese ( Parmesan)
  • Fresh Basil sprigs to garnish
  • Salt to taste
Method:
  1. Cook the pasta following the instructions on the packet until al dente ("to the tooth").



  2. To make the pesto sauce, place the basil leaves, garlic, walnuts, seasoning and olive oil in a food processor or blender. Blend until very creamy.



 3. Drain the pasta thoroughly and turn it into a mixing bowl. Pour the sauce and grated cheese and toss to coat. 



  4. Divide among the serving plates and serve, sprinkled with the extra cheese and garnish with fresh basil sprigs.

  1. My favorite pesto sauce!!! I can enjoy it with anything! Loving the spiral pasta the pesto must have been well settled in all the nooks n crannies.
