Mix Veg Cutlets / Healthy Kids snacks / Onion Garlic Free Recipe


Do you have some left over veggies in the fridge and are clueless as to what to do with it ?? Here is the answer. Just boil them , mash , add spices as per your choice and make yummy cutlets with them.

These Cutlets serve as a fuss free , healthy and filling snacks .They can be baked or can be roasted on skillet with very less or no oil , thus making them all the more healthier. These cutlets are also a clever method to make your kids eat the veggies. You can add this veggie cutlets in burger buns and your job is done !!

I have used Carrots, Potatoes, Green peas and Sweet corn to make this cutlets. You may use Cauliflower, Broccoli, sweet potatoes, Beetroot or any other veggie of your choice. This is an Onion garlic free recipe The cutlets can also be made in big batch ahead of time and kept in zip lock bags in the deep freezer and just shallow fried when needed. Serves good option for picnics and kids parties.

Ingredients: Makes 8- 10 Cutlets
  • 1/4 cup green Peas
  • 1/4 cup Sweet Corn
  • 5-6 Baby Potatoes or 2-3 medium Potatoes
  • 2 Carrots
  • 3-4 bread slices
  • 1/2 inch Ginger piece
  • 1 green chilly
  • 1 tsp red Chili powder
  • 1/2 tsp Garam Masala
  • 1/2 tsp Black Pepper powder
  • Salt to taste
  • 2 tbsp Suji / Semolina
  • Oil for greasing the Non Stick pan
Method:
  1. Boil the green peas and sweet corn either in a Microwave or open vessel. Drain water and keep aside. Boil the Potatoes and Carrots in a pressure Cooker for 2 whistles. Crush the green chilly and ginger to paste using a grinder.
 


  2. Peel the boiled Potatoes and Carrots. mash them in a mixing bowl using a spoon . Crush the sweet Corns and green Peas in a grinder and add them to this bowl. Similarly make bread crumbs using a grinder and add it to the veggies. Also add the spice powders, chilly ginger paste and salt.




  3. Mix all this together very well . The mixture should not be very dry or wet. if it is too sticky you may add more bread crumbs as they help in binding and absorb extra moisture. Pinch out small portions and give them round or oblong shape using your palms. Make all the cutlets similarly and keep them in the fridge for at least 15 - 20 minutes . This ensures the cutlets get firm and hold their shape.



   4. Grease the non stick skillet or pan with few drops of oil and heat it on medium flame. Take some Semolina / Suji in 1 plate and keep the cutlets over it such that the Suji gets coated on both the sides of the cutlet. Now place the cutlets on heated skillet and roast them over low to medium flame until they turn crisp and golden brown from both the sides.



  5. Serve the mix veg cutlets hot with some sauce or chutney of your choice. I have served the cutlets with Amla Chutney.
