Mixed Beans Kurma


Beans are nutritional powerhouses packed with protein, fiber, B vitamins, iron, potassium, and are low in fat. Studies have shown that people who eat more legumes have a lower risk of heart disease. Beans can not only lower cholesterol and help manage diabetes ,but they also can fight cancer and help you loose weight .

We can use beans alone or in combination to make many lip smacking dishes . i have posted Pindi Chole which is made from Chick peas /Garbanzo beans (Chole) , Dal Makhani from whole black lentils and Kidney beans , Missal Paav from sprouted Moth beans. Today i am sharing the recipe of mixed beans kurma which i learnt from one of my dear friend Nithya. A very simple yet tasty beans curry which can be paired with chapati , Paratha or Jeera Rice.


Have made this mixed beans Kurma using Pinto beans ( Chitra Rajma) , Garbanzo beans ( Chole) and sprouted moth beans ( Moth). You may mix any combination of beans you like in this Kurma.

Ingredients:
  • 1/4 Cup Pinto Beans/ Chitra Rajma
  • 1/4 Cup Garbanzo Beans / Chole
  • 1/4 Cup Sprouted Moth Beans
  • 1 large Onion finely chopped
  • 1 large Tomato finely chopped
  • 2 -3 tbsp grated dry Coconut
  • 1 Black Cardamom (badi elaichi)
  • 1 stick of Cinnamon / Dalchini
  • 1 tsp Cumin seeds/ Jeera
  • 1 tsp Fennel seeds/ Sauf
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • 1 tsp Garlic Ginger paste
  • 1/4 tsp Turmeric powder
  • Pinch of Asafoetida/ Hing
  • 2 tbsp Oil 
  • Salt to taste
  • Fresh Coriander leaves for garnishing
Method:
  1. Soak the Chitra Rajma and Chole in water overnight. Next day wash them and add sprouted moth beans and pressure cook the three in pressure cooker with turmeric powder for 2 whistles.




  2 . In a wok heat oil on a medium heat and then lower the flame. Add the Cumin seeds , Fennel seeds and Asafoetida. Once the seeds sizzle add the whole spices and coconut flakes. Stir them and remove all this in the grinder jar, take care not to burn the coconut.



  3. In the same wok add the garlic ginger paste. Saute well until the raw smell goes, now add the chopped Onions followed by the Tomatoes. Saute till the Onions turn translucent and Tomatoes become mushy.


   4. Now add the red chili powder and coriander powder. mix well. Cook for another 1 minute and then remove all this in the same grinder jar and grind this Kurma masala to a fine paste using little water.




    5. Open the Cooker after cooling down and add this masala paste and salt to the cooked beans and mix properly. Close the lid and cook the beans with this masala for another 2 whistles or until the beans are fully cooked.



   6.  Garnish the mixed beans Kurma with finely chopped coriander leaves and serve hot with rice or chapati.
