Dates and cornflakes energy balls make a healthy and nutritious treat for all ages. It is a no-cook snack, naturally sweetened with dates and having a chewy texture and a delicious crunch from nuts and cornflakes in every bite. These energy balls can be made in a jiffy using just 4 ingredients. Served with a glass of milk, it is a perfect way to kick start the day. It also makes a great grab-and-go snacks for kids and working folks and a guilt-free dessert to satisfy some sweet cravings. Dates and cornflakes energy balls remain good for around 10 days at room temperature. The recipe is vegan and gluten-free.
What goes into these Dates and Cornflakes Energy Balls? The Ingredients:
As mentioned earlier, you can make these no-cook dates and cornflakes energy balls using just 4 ingredients, in a jiffy and that too using just a mixer grinder. Isn't that cool? Moreover no artificial sweetener is used and the recipe is oil or ghee free.
- Dates: You can use any variety of pitted dates to make these energy balls. If using a seeded variety, remove the seeds by slicing the dates lengthwise with a small knife before running them in a food processor. Dates have many health benefits and act both as a binding agent which holds together the cornflakes and nuts and as a natural sweetener.
- Cornflakes: Being a nutrient dense and fiber-rich breakfast cereal, cornflakes add both nutrition and a lovely crunch in each bite of these dates and cornflakes energy balls.
- Nuts: Nuts are bite-size nutritional powerhouses, packed with heart-healthy, fats, protein, vitamins and minerals. You can use any nut of your choice. I have used my all time favorite almonds and walnuts.
- Desiccated Coconut: I have rolled my dates cornflakes balls in desiccated coconut to make them more appealing. You may add them straightway into the grinder jar along with other ingredients as well or skip it if you wish.

Preparation Time: 10 minutes
Cooking Time: Nil
Serves: 10-12 Medium sized Energy balls
Ingredients: Measurements used 1 cup = 240 ml
- 2 1/2 cups pitted (seedless) dates
- 1 cup cornflakes
- 1/4 cup chopped nuts ( I have used walnuts and almonds)
- 1/4 cup desiccated coconut (optional)
Method:
- Roughly chop the pitted dates and transfer them to a blender jar. Pulse for a couple of times.
2. Add cornflakes to it and pulse such that cornflakes get incorporated well with the dates mixture.
3. Lastly add chopped nuts and pulse it once.
4. Take small portions of the mixture and roll them into a balls. You may get around 8 large balls and around 12 medium sized balls from the mixture. Lastly roll the dates and cornflakes balls in a bowl of desiccated coconut.
- You can use any variety of pitted dates to make these energy balls. If using a seeded variety, remove the seeds by slicing the dates lengthwise with a small knife before running them in a food processor.
- If your dates appear hard or a bit dry, just soften them in a microwave for few seconds and then process in a food processor.
- I have rolled my dates cornflakes balls in desiccated coconut to make them more appealing. You may add them straightway into the grinder jar along with other ingredients as well or skip it if you wish.
- There is no fixed proportion of ingredients in this recipe. You may adjust the quantities as per your wish. If you like soft balls, reduce the quantity of cornflakes and add more dates. Any nut or dry fruit can be added as per your choice.
