Baby Corn Pulao


Baby Corn Pulao is a flavorful rice dish. Rice is cooked with whole spices and veggies like baby corn, green peas , onions and carrots to give a mildly spiced wholesome pulao. This vegetarian one-pot meal with an easy-to-make recipe serves as a great lunch box menu for kids and adults alike. Paired with some papad and raita or curd this baby corn pulao is perfect lunch on a Summer afternoon when you are not in a mood of cooking elaborate meals.  The recipe is gluten free and vegan and is ready with 30 minutes from scratch.


Baby corn is obtained from the harvesting of young plant of maize when its stalk is still small and immature. It is a nutrient-dense, low-carb veggie which is rich in fiber. Baby corn is similar to regular corn but are picked before maturing and hence the nutrient content varies between the both varieties. Baby corn contain essential nutrients like Magnesium, Iron, Vitamin A and phosphorous. As it has less starch content it is beneficial for losing weight and being a rich source of soluble and insoluble fibers, it aids in digestion.


Baby corn look cute and are used in making variety of food dishes like salads, soups , curries, starters etc. My son loves corn and i pick up either packed sweet corn kernels or baby corn packet every week during my vegetable shopping. So without further ado, let's get started.

Baby Corn Pulao Video Recipe

                   


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients: Measurements Used- 1 cup= 200 ml
  • 1 cup rice
  • 10-12 baby corn
  • 1/4 cup green peas , fresh or frozen
  • 1-2 small long carrots
  • 1 onion
  • 3-4 cloves garlic
  • 1/2 inch ginger
  • 1-2 green chilies
  • 1 small bunch fresh coriander
  • 1 bay leaf
  • 1/4 teaspoon cumin seeds
  • 2 cloves
  • 2 black pepper corns
  • 1 teaspoon garam masala or pulao or any curry masala
  • 2 tablespoon oil
  • Salt to taste
Method:
  1. Rinse and soak the rice for at least 10 minutes in water. Mean while we will prepare the veggies. Peel and rinse the baby corns and chop them into roundels. Peel and slice the carrots in roundels as well. Peel, wash and slice the onion. In a mortar and pestle or grinder jar grind the garlic , ginger and green chili.

2. Heat oil in a pressure cooker. Add cumin seeds followed by the bay leaf, cloves and black pepper corns. Once the spices sizzle, add the sliced onions and fry for a minute or so. Next add the garlic ginger and green chili paste and saute until the raw small goes off.


3. Next tip in the green peas, carrot and baby corn roundels. Saute the veggies for 2-3 minutes before adding the soaked and drained rice. Saute everything well for another 1-2 minutes.


4. Now add garam masala and salt and 2 1/2 cup hot water. Mix well and lastly add chopped coriander leaves and cover the pressure cooker with the lid. Pressure cook the rice for 2 whistles and put off the flame. Once the pressure has been released naturally, open the lid of the cooker and fluff the pulao delicately.




 5. Serve the delicious Baby Corn Pulao with raita and papad and enjoy with your loved ones. I have served the pulao with Boondi Raita.

                           

Recipe Notes:
  • You can use any long grain rice to make this pulao. I have used Basmati rice.
  • You may use mushrooms and vegetables like french beans, broccoli , bell peppers also in this pulao.
  • You may skip green chili if making for toddlers.
  • You may use biryani masala, or any curry powder instead of garam masala.
