Baby Corn Pepper Fry


The much-awaited Monsoon has finally made an appearance in Mohali today , making the weather quite pleasant. I had been avoiding elaborate meals and oily food all these days and tried to kept our meals light and hydrating. But now that monsoon has arrived , it is time to satisfy our cravings for delicious food. To begin with , i made this colourful and lip smacking dish, baby corn pepper fry.


  Baby corn pepper fry is a popular Indo-Chinese style appetiser. As the name suggest the dish is a stir fry made with bell peppers and baby corn. In this recipe, at first, the baby corn is blanched ,then seasoned with pepper and deep fried to perfection. The crispy baby corn is then stir fried along with bell peppers. To cut down the extra calories of deep frying the baby corn, air fryer can be used. Recently i have bought Samsung convection microwave which has an extra new feature of slim fry technology which works on the same principle of that of an air fryer. So i could get crispy baby corn with just few drops of oil. 

I have used coloured bell peppers which not only adds flavors but also makes the dish colourful and appealing. My son loves corn in any form and prefers pepper flavor over red chilly, so this dish is one of his favourites. Baby corn pepper fry is a crispy and colourful starter loaded with flavors. The recipe is easy to follow and does not require fancy ingredients. This can be served as an appetiser or as a side dish with chapati or steamed rice.

Preparation time: 10 minutes
Cooking Time: 20 minutes
Serves : 4

Ingredients:
  • 10-12 Baby Corns
  • 1 medium red bell pepper , diced
  • 1 medium yellow bell pepper , diced
  • 1 medium green bell pepper, diced
  • 1 large onion roughly chopped 
  • 3-4 cloves of garlic, minced
  • 1 teaspoon Soy sauce
  • 1 teaspoon vinegar
  • 2 teaspoon cornflour
  • 1 teaspoon freshly crushed black pepper
  • Salt to taste
  • 2 tablespoon oil


Method:
  1. Wash the baby corn . Heat a sauce pan with 2-3 cups of water with salt. Once the water boils add the baby corn and cover cook for 5-7 minutes. Meanwhile chop the bell peppers and onion.


  2. Chop the blanched baby corn diagonally into bite size pieces.


  3.In a bowl place the baby corn pieces, dust corn flour over it. Season with black pepper and salt. Toss well so that seasoning coat the baby corn evenly.


  4. Deep fry or air fry until crisp and golden brown from both sides. I have brushed the baby corn with little oil and cooked them in slim fry option in my Samsung convection microwave oven.




  5. In a pan , heat oil on medium flame. Add minced garlic and saute until raw smell goes off. Now add chopped onion and saute on high flame.


  6. Add the coloured bell peppers and stir fry for 2-3 minutes.




  7. Add the crisp baby corn to the bell peppers and toss well. Stir fry for 1-2 minutes followed by the addition of vinegar , soy sauce and salt.





  8. Lastly add freshly crushed black pepper and stir fry for a minute or so and put off the flame.



  9. Serve the delicious baby corn pepper fry immediately as both bell peppers and baby corn taste best when crunchy. Can be had as a starter or as a side dish with fried rice.



  Notes:
  • You can add celery. spring onions, mushrooms or broccoli in this dish for variation.
  • Be careful while adding salt in step number 7 as baby corns are seasoned with salt and even soy sauce has some salt.
  • Freshly crushed black pepper enhanced the flavor .

  8. Poonam I like this version of not deep frying the baby corn. I'll have to try this healthier version. As I don't have an air fryer will try cooking them in the oven. A delicious looking colorful dish.
