Sattu Ka Ghol / Savory Sattu Drink


Sattu Ka Ghol also known as Sattu ka namkin sharbet is a delicious savory Summer drink made with Sattu (roasted black chickpea flour), black salt, herbs, spices and raw onion. It is a refreshing and cooling protein-rich drink which is filling , has cleansing properties and is an excellent thirst quencher. This no-cook drink is gluten free, vegan and can be made in a jiffy. Sattu ka ghol is easy on the pocket, suitable to people of all ages and one of the best ways to get the amazing health benefits of Sattu, which is considered as a power house of nutrients. 


Sattu and Besan look alike but are not the same. While Besan is the flour obtained from black chickpea, Sattu is made from the roasted black chickpeas. The dry-roasting procedure seals all the nutrients intact and increases its shelf life. Sattu is often referred to "the poor man's protein". It is high on insoluble fiber which is light to the digestive system. It has good proportions of iron, manganese, and magnesium and is low on sodium too. These nutrients benefit the body and boost the immune system. Sattu has cooling effect on the body and thus provide relief from the scorching heat. It can serve as a great food for all age groups, whether babies, adults or elderly. Sattu has low glycemic index which makes it ideal for diabetic patients and weight watchers as well. 

Sattu is easily available in grocery shops of North India. But if you cannot source it in your part of the world, you can make your own Sattu by grinding the unsalted skinned and split roasted chickpea which is used as in making chutneys and as thickener in gravies. The picture below show the salted roasted chickpeas which are used as snack , the unsalted skinned and split roasted chickpeas and the sattu for reference. 


Both sweet and savory varieties of sattu drink are sold by road side vendors during hot Summers as a cooling drink in Bihar, Uttar Pradesh and Calcutta. The sweet variety is made using jaggery. Drinking Sattu drink on an empty stomach has many benefits. It improves bowel movement, flushes out body toxins, increases appetite, enhances energy and helps in losing weight.  Apart from this drink, Sattu is used as an ingredient in making many healthy dishes like Litti Chokha, sattu ladoo, sattu paratha, upma, porridge etc. If you have not heard or tried this Sattu drink yet, do give it a try this Summer season. So lets get started.


Preparation Time: 5 minutes
Cooking Time: 0 minutes
Serves: 2-3

Ingredients:
  • 3 tablespoon Sattu
  • 2 cups cold water from earthenware water pot (matka)
  • 2 tablespoon onion, finely chopped
  • 1 tablespoon fresh coriander leaves, finely chopped
  • 1 teaspoon dry mint powder
  • Black salt to taste
  • 1 green chili, finely chopped (optional)
  • 1/4 teaspoon roasted cumin powder
  • 1 tablespoon lemon juice

Method:
  1. In a bowl take the sattu. Add roasted cumin powder, black salt, mint powder and chopped green chili to it. Now add 1/2 cup water and whisk everything well to get a lump free slurry. 


  2. Next add the remaining water, finely chopped coriander leaves ,chopped onions and lemon juice. Give this slurry a good mix. Our healthy delicious Sattu ka ghol is ready to serve !



Recipe Notes:
  • Sattu is not Basen. It is easily available in Indian groceries but if you still cannot source it in your part of the world, you may powder the roasted split and skinned chana to make sattu at home using a grinder . 
  • You may replace the green chili with black pepper powder if serving to kids or if you cannot tolerate the heat of green chili.
  • Do not skip the chopped onions as they do add to the flavor of the drink and give it a bite.
  • I would recommend not to substitute black salt with table salt as it gives the drink a characteristic flavor.
  • You may add chat masala powder to the sattu drink to make it all the more flavorful.
  • If you do not have dry mint powder, use the fresh mint leaves.
