Dry Chilli Chicken Recipe

Chilli Chicken is one of the most popular Indo-Chinese dish served in Chinese restaurants and is a loved chicken dish among meat eaters. It can be made as a dry preparation or as gravy. Here i am sharing the dry Chilli Chicken recipe . This can be served as a starter, appetizer or a side dish along with noodles or fried rice.

Here the boneless Chicken pieces are marinated in soy sauce, black pepper powder and ginger garlic paste and then deep or shallow fried  and cooked with some veggies , pepper and again seasoned with sauces. Mainly green bell pepper is used in this preparation , but i have used even the red ones to make the dish colorful.


Every bite of Chilli Chicken is a blast of flavours. It is spicy because of added green chilies and pepper, it gets a crunch due to the bell peppers and crust formed on the chicken pieces due to the flour used to coat them , it gets a slightly sour and tangy taste from soy sauce and vinegar and red bell pepper and sugar impart a slight sweet taste to the chicken . All and all a very flavorsome and delicious dish for all meat lovers !!

Chilli Chicken can be easily made at home and that too without adding any artificial coloring or  MSG ( Monosodium Glutamate - a flavor enhancer mostly used in Chinese preparations and which is considered as a silent killer).

  • 200 grams boneless Chicken 
  • Oil for Shallow frying the Chicken pieces
  For Marination
  • 1 tbsp Soy Sauce
  • 1 tsp black Pepper powder
  • 1 tsp Ginger Garlic paste
  • 2 tbsp Cornstarch
  • 1 tbsp All purpose Flour
  • Salt to taste
  For Seasoning
  • 1 tbsp Soy sauce
  • 1 tbsp Chilli saucde
  • 1 tsp Vinegar
  • 1 tsp back Pepper powder
  • 1/2 tsp Ginger Garlic paste
  • 1 Large Onion finely sliced
  • 1 Green Bell Pepper cubed
  • 1 Red Bell Pepper cubed
  • 2-3 green chilies Slit and deseeded
  • Spring Onion greens for garnishing.
  1. Clean and wash the Chicken . Cut bite size pieces and keep in a bowl. Add the ingredients for marination . Mix properly , cover and marinate the chicken for at least 45 minutes. 

 2. Heat up oil in a pan . Shallow fry the chicken pieces in batches until golden brown and crispy from both sides. Remove and allow to drain on a tissue paper.

   3. Now remove excess oil and keep only 2 tbsp oil in the wok. Add slit green chilies , ginger garlic paste followed by slices of Onion. . Saute for a while and add the ingredients under the list seasoning.

 4. Mix well and add in the bell peppers and fried chicken pieces. Saute on high flame for 2-3 minutes. Sprinkle some salt and black pepper powder and put off the flame.

  5. Garnish with Spring Onion greens and serve hot as a starter or a side dish with noodles or fried rice.
