Peanut Rice is a South Indian style rice dish made with roasted and ground peanuts, lentils and basic spices. It is aromatic and mildly spicy in taste with dominant nutty flavor coming from the peanuts. Peanut rice can be made using fresh steamed rice or with left-over rice and serves as a delicious lunch box option with some salad, chips or curd. Peanut rice has a lovely crunch in every bite and is an onion-garlic free vegan and gluten-free preparation.
What goes into my version of South Indian Style Peanut Rice ? The Ingredients:
Peanut rice made in South Indian style has a very simple and easy to follow recipe made with basic ingredients that are almost always available in Indian Kitchen Pantries.
- Rice: You may use Basmati rice or reqular small grain variety of rice to make this dish. Also Peanut rice can be made using freshly cooked steamed rice or with leftover rice.
- Peanuts: The key ingredient in this dish is peanuts which are used at 2 stages. Dry roasted peanuts are powdered along with roasted lentils and spices and used to flavor the rice . Peanuts bare also used at tempering stage. Peanuts lend a wonderful and characteristic nutty flavor and crunch to the rice.
- Spices: Basic Indian spices like mustard seeds, cumin seeds, black pepper corn, dried red chilies, are used in this recipe
- Oil: Sesame seed oil lends a lovely flavor to this dish, however you may use any neutral cooking oil instead.
- Lentils: I have used black gram only, however yo may use Bengal gram as well. The lentils are dry roasted and then coarsely ground and used to flavor the rice.
- Curry Leaves: Curry leaves make the rice more aromatic and flavorful.
- Sesame Seeds and Dry Coconut : I have dry roasted sesame seeds and grated dry coconut also along with peanuts. You may skip it if you wish to.

Preparation time: 5 minutes
Cooking Time:15 minutes
Serves: 4
Ingredients:
- 2 cups steamed rice / leftover rice
- 1/4 cup raw peanuts
- 2 sprig curry leaves
- 1 tablespoon sesame seeds
- 1 tablespoon grated dry coconut / desiccated coconut
- 1 tablespoon black pepper corn
- 1 teaspoon urad dal . skinned and split black gram
- 5-6 dried red chilies
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon Cumin seeds
- 2 tablespoon sesame seed oil or any neutral cooking oil
- Salt to taste
- Dry roast peanuts (reserving 1 tablespoon), black gram, sesame seeds, Cumin seeds, grated coconut, broken dried red chilies and a sprig of curry leaves in a pan one by one. Once done, put off the flame and remove the roasted ingredients on to a plate and allow to cool down completely, before grinding it to a coarse powder.
- Meanwhile, if using fresh cooked rice, remove it onto a plate, fluff it using a fork and allow to cool down completely before the tempering stage.
- Heat oil in a non-stick wok and add mustard seeds to it. Once the seeds splutter, add remaining 1 sprig curry leaves, followed by 1 tablespoon reserved peanuts and chopped dry red chili. Once the peanuts crackle, tip in the cooled down rice followed by salt to taste and around 2 tablespoon coarsely ground peanut masala.
- Give everything a good stir and your flavorful aromatic peanut rice cooked in South Indian style is ready to serve.
- Serve the peanut rice on its own or with some vegetable salad, curd or chips and enjoy with your loved ones!
- Adjust the amount of dried red chilies as per your spice tolerance.
- Peanut rice can be made using fresh steamed rice or leftover rice.
- If using fresh rice, make sure it has cooled down completely.
- You may also dry roast Bengal Gram (chana dal) along with black gram (urad dal).
- You may use Basmati rice or any short grain regular rice to make Peanut rice recipe.
- This is an onion garlic version so refrained from using garlic. If you like the flavor you may dry roast garlic along with peanuts and use it in ground form.
- You can serve peanut rice on its own or with some vegetable salad, curd or chips. Goes well in lunch box as well.
