Ragi Vegetable Soup

                                   

Ragi vegetable soup is a flavorful and nutritious one pot meal loaded with healthy goodness of ragi flour and seasonal vegetables. This vegan and gluten-free ragi soup is filling, easy to digest and can be served to all ages starting from toddlers to elderly. If you are on a weight loss journey, or looking for some healthy diet options after festive indulgence,  make sure you include this healthy ragi vegetable soup in your regular diet.

What goes into Ragi Vegetable soup? The Ingredients:

This ragi vegetable soup is a simple yet flavorful and nutritious one pot soup made with handful ingredients from your kitchen pantry. 

Ragi Flour: You may use sprouted or simple ragi flour to make this soup. A slurry is made using ragi flour and water which is stirred to the soup once the vegetables are cooked.

Vegetables: You may use any seasonal vegetables in making this ragi soup. Even leafy greens can be added as per your taste and liking. I have used carrots, french beans, green peas, sweet corn, spring onions. Broccoli, cauliflower, can also be added.

Spices and Herbs: The soup is mildly spiced. Green chilies, garlic, ginger and black pepper corn is used to season the soup.

Vegetable Broth: To make the soup more flavorful and filling, vegetable broth can be added if you have it ready at hand.

You may add chopped tofu or paneer also to the soup as a protein source.

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Serves: 4

Ingredients:

  • 3 Tablespoon Ragi Flour
  • 1 small carrot finely chopped
  • 1/4 cup fresh green peas
  • 1/4 cup sweet corn
  • 3-4 french beans chopped
  • 1 small onion finely chopped
  • 2 spring onions chopped, green and whites separated
  • 5-6 black pepper corn
  • 1/4 teaspoon cumin seeds
  • 2 green chilies , slit
  • 3-4 garlic cloves, minced
  • 1/2 inch ginger, grated
  • 2 teaspoon oil
  • Salt to taste
Method:
  1. Heat oil in a wok on medium flame.
  2. Add cumin seeds to it.
  3. Once the seeds sizzle, add slit green chilies, minced garlic and grated ginger. Saute for 1-2 minutes.
  4. Next, add chopped spring onion whites and  onions and stir fry with a pinch of salt, until the onions turn translucent.
  5. Next, tip in chopped carrot and green peas followed by sweet corn and stir fry for another 1-2 minutes.
  6. Add 2 cups water or vegetable broth if you have at hand and cover cook the veggies for 5-7 minutes. 
  7. Meanwhile, add 1 cup water to 3 tablespoon ragi flour and make a lump free slurry. 
  8. Stir in this slurry to the vegetables along with pounded black pepper corns and salt to taste. 
  9. Allow the soup to come to a rolling boil and then simmer for another 4-5 minutes, while stirring intermittently. 
  10. Lastly put off the flame, garnish with spring onion greens and serve immediately.
