Beetroot Stir Fry / No Onion No Garlic Vegetarian Recipe / Healthy kids lunch box recipes

I was anaemic during my pregnancy and was recommended eating lots of veggies to increase my haemoglobin and Beetroot was among the top most in that list. Frankly speaking,  I could have Beetroot , only in small amounts and that too in my Tomato soup in those days until one of my friends in Hyderabad introduced me to this dish - Beetroot Stir fry ! Since then beetroot has secured a fixed position in my kitchen pantry. Now not only me , but my family also like this veggie. You can check out my other Beetroot recipes -  Baked Beetroot CutletMiracle juiceBaked Veggie florets  and Tomato Soup  .

Beetroot stir fry is a delicious way to enjoy this healthy vegetable and the dish is very appealing . Also this is an Onion Garlic free recipe . Deep red coloured Beetroot is either grated or chopped into cubes and  then stir fried with seasoning. The recipe is very simple to follow.  Beetroot stir fry goes well  as a side dish with Chapati or Poori for Lunch or can be served in Kids Lunch box.
