Beetroot Stir Fry / No Onion No Garlic Vegetarian Recipe / Healthy kids lunch box recipes



I was anaemic during my pregnancy and was recommended eating lots of veggies to increase my haemoglobin and Beetroot was among the top most in that list. Frankly speaking,  I could have Beetroot , only in small amounts and that too in my Tomato soup in those days until one of my friends in Hyderabad introduced me to this dish - Beetroot Stir fry ! Since then beetroot has secured a fixed position in my kitchen pantry. Now not only me , but my family also like this veggie. Beetroot stir fry is a delicious way to enjoy this healthy vegetable and the dish is very appealing . Also this is an Onion Garlic free recipe . Deep red coloured Beetroot is either grated or chopped into cubes and  then stir fried with seasoning. The recipe is very simple to follow.  Beetroot stir fry goes well  as a side dish with Chapati or Poori for Lunch or can be served in Kids Lunch box.

Ingredients:
  • 2 medium Beetroot finely chopped
  • 2 tbsp Bengal gram dal ( Chana dal )
  • 2 tbsp split and skinned black gram ( white Urad dal )
  •  2 tbsp scrapped fresh Coconut
  •  2 tbsp Oil
  • 1/4 tsp Cumin Seeds
  • Pinch of Asafoetida
  • 1/4 tsp Turmeric Powder
  • 1 1/2 tsp red Chili powder
  • Salt to taste
  • 2 sprigs of fresh Curry leaves


 Method:
  1. Heat a wok on medium flame and add 2 tbsp oil to it. Add the Cumin seeds followed by fresh curry leaves . Now add pinch of Asafoetida and Turmeric.


    2.  Add the soaked and drained Chana dal and Urad dal. Stir for a minute or so.


  3. Now add the chopped Beetroot and mix well. Add salt and red Chili powder. Mix properly and cover cook for 3-5 minutes.








  4.  Lastly add the scrapped fresh Coconut . Stir well and put off the flame .



 5.  Serve with Chapati or Poori .
