Daliya Meva Delight

Shahi lapsi Kheer is a healthy and delicious Indian dessert made from Daliya/ Lapsi/ Broken wheat. It is a smooth , creamy and sweet daliya delicacy where broken wheat is cooked with milk , sugar and dry fruits. This dish serves as a good alternative for the regular Vermicelli kheer and can be taken as a whole meal. As the name suggests this dessert has the richness of all the dry fruits (Meva) and is very easy to make -  a perfect healthy recipe for kids !



Bulgur  is commonly known as daliya in India and it is the not refined wheat which is very nutritious, as it has not lost any nutrients that are present in the whole wheat. It is a good source of regular requirement of Manganese and fibre that are much needed in our food . As it is high in protein and low in fat and calories, it offers you nutrients without adding pounds to your body and thus an excellent diet for those who want to lose weight. It also helps to keep our digestive track healthy.

Ingredients for Daliya Meva Delight.
  • Broken wheat / daliya - 3-4 tsp
  • Ghee - 2 tsp
  • Sugar / Jaggery / Brown Sugar- 1/4 cup or as desired
  • Milk 1/2 litre
  • Saffron strands
  • Nuts of your choice + Raisins ( I have used Cashews, Walnuts, Almonds) - 1 cup
  • Cardamom and Nutmeg powder - 1 tsp


Method:
  1. Take ghee is a pressure cooker and heat it . Add daliya , stir well and cook till it gets nice golden colour .

    2.   Add boiled milk ( preferably hot) , Sugar , dry fruits and raisins and mix well. I have used whole cow milk.


   3.  Cover and cook until 3-4 whistles. 


  4.   Once pressure is released add saffron and cardamom nutmeg powder. Mix well.  The broken wheat pudding is ready. Serve it hot or chilled !


Notes:
  1. If using jaggery as a sweetener in the daliya kheer, add it at the end after pressure cooking daliya and milk.
  2. This kheer can be cooked in an open non stick pan instead of pressure cooking it. This method of cooking results in a more creamier and thicker kheer.
