Churma Recipe


Churma is a sweet delicacy from Indian state of Rajasthan and is served as an  accompaniment to the classic Dal Baati Recipe . It is basically a sweetened and cardamom flavored mix of crushed baatis. Traditionally it is made my mashing up wheat flour baatis and roasting it in ghee and adding  jaggery to it. Churma is high in calories and is the best way to use the leftover baati.

There are many ways to make churma. Here i am following the simple method to make this Rajasthani churma ie by making baatis without salt, crushing them and adding ghee and powdered sugar or jaggery powder to it. The churma is further flavored with cardamom powder and topped with slivered almonds and pistachio. Churma can be had as a powder or made into ladoo.

                               

Preparation time: 25 minutes
Cooking time: 30 minutes
Serves :  4

Ingredients for Baati
  • 1 cup whole wheat flour
  • 1/4 cup suji
  • 3-4 tablespoon ghee
  • 1/4 teaspoon baking powder
  • Water or milk to knead the flour
Ingredients for Churma:
  • 6 baati
  • 3-4 tablespoon ghee ( add more if you are looking for authentic taste)
  • 1/2 cup powder sugar
  • 1/4 cup desiccated coconut
  • 1/4 teaspoon cardamom powder
  • 2 tablespoon slivered almonds
  • 1 tablespoon slivered pistachio
Method:
  1. In a mixing bowl, take whole wheat flour, suji, baking powder, and ghee. Mix everything well using your finger tips. The flour would look crumbly and you should be able to bind it to a ball by pressing it in your fist. Now using very little milk or water , knead the flour into a stiff dough. The dough should be stiff then what we make for paratha.



2. Cover the dough with  a damp muslin cloth and let it rest for 20 minutes. Preheat the oven at 180 degrees Celsius for at least 10 minutes. Now knead the dough again after resting time and make 8 equal portions . Make balls from each portion, slightly press them with palm, make indentation similar to "+" sign on top of each and arrange them on a greased or lined baking tray.




3. Bake the baati at 180 degrees Celsius in a preheated oven for 12- 15 minutes. Flip the baatis again and bake them for another 15 minutes or until they turn light brown in color.



4. Now crush 3-4 baatis and place them in a grinder jar and pulse to get a coarse powder. Add ghee and powdered sugar to it. Mix well. 





5. Now add desiccated coconut, cardamom powder and slivered nuts. Mix well and serve the melt in mouth churma .
