Cheesy vegetable discs are delicious baked bread appetizers. These cute looking discs are loaded with healthy goodness of whole vegetables , cheese and paneer (cottage cheese) .They are easy to make and serve as perfect starters for parties and kids gatherings.These cheesy discs are not only visual treats , but they are delicious and nutritious too. The bread provide carbs , cheese and paneer give us protein and vegetables provide our body with minerals and vitamins.
Every bite of this snack is a burst of flavors as it is a bit tangy , spicy and flavorful all at the same time. The recipe calls for cutting the bread slices into roundels using a cookie cutter. Few of these roundels are further cut again by a small cutter , to get a ring of the bread. A flavorful spread of butter and cheese is made which coats the roundels of bread and the rings are placed over this. The empty round cavity so formed is filled with a stuffing of vegetables and paneer . The discs are then baked in a preheated oven until crisp.

Serves: 6
Ingredients:
- 1 packet white sandwich bread
- 1/2 cup crumbled cottage cheese ( paneer)
- 1 onion finely chopped
- 1 small tomato , de seeded and finely chopped
- 1/4 cup finely chopped carrot
- 1/4 cup boiled sweet corn
- 1/4 cup boiled green peas
- 1 small green bell pepper finely chopped
- 4 tablespoon grated proceeded cheese
- 2 tablespoon butter
- 3-4 tablespoon tomato sauce
- 1 teaspoon black pepper powder
- 1 teaspoon red chili flakes
- 1/2 teaspoon mixed dried herbs
- Salt to taste
Method:
- Preheat the oven at 180 degrees Celsius for 15 minutes. Meanwhile in a mixing bowl take crumbled cottage cheese. To it add all the veggies and mix well.
2. Add 3 tablespoon grated processed cheese , chili flakes, black pepper powder, herbs , salt and tomato sauce to the vegetable paneer mixture and mix well. Taste the mix and adjust the seasonings as per taste. Our stuffing is ready.
3. For the spread, in a bowl take butter and remaining grated processed cheese . Add black pepper powder, salt and tomato ketchup and mix well. Our spread is ready.
4. Using a big round cookie cutter , cut roundels from the bread slices.
5. Now using a small cookie cutter or sharp lid , cut out roundels from half of the big roundels to get bread rings.
6. Now apply the spread we have prepared in step 3 over the roundels and place rings over them and press lightly. Stuff up the cavity so formed with vegetable panner filling .
7. Brush the edges of the bread discs with little oil or butter and arrange them in a greased baking tray. Bake the discs in a preheated oven for 10-12 minutes or until the edges are crisp and golden.
8. Serve the delicious tempting cheesy vegetable discs immediately .
