It is Winter Break for Chinmay and i am pretty busy trying to keep him happy and engaged in some fun activities. Thankfully this year, so far the winter here in Gurgaon is not very harsh and that gives some space for outdoor activities for kids. He enjoys playing badminton in the evening and opts for skating during morning time. Today for his play date he wanted me to make some yummy snacks for his friends. So made these quick yet delicious Bread Pizza and paired it with his all time favourite Walnut Banana Muffin. All the kids enjoyed the snacks and i was more than happy to get a tight hug from him with the magical words..."You are the World's best Mumma " :)
Vegetable Bread Pizza is a delicious snacks made with
toasted bread slices topped with a layer of tomato sauce and desired veggies.
It is a quick and easy alternative for regular Pizza. For me it is one of the best way to feed my son with loads of veggies. It is very popular dish loved by all age
groups and can be made with ingredients which are usually stocked up in any
kitchen pantry. Best part is that this bread pizza can be made even on a stove
top. So those who do not have oven can also enjoy this delicious snacks.Great recipe for get together and kids birthday
parties.
In this recipe the bread slices act as pizza base. Lightly
buttered bread slices are toasted either in an oven or on stove top. A layer of
pizza sauce is then spread over the toasted bread slices. Ready made pizza sauce
can be used for this but I have made the sauce at home. Next the bread slice is
topped with veggies. Finally grated cheese is added over the veggies and the
slices are baked at 180 degree Celsius for 8-10 minutes. This Mini Bread pizza can be had plane or with sauce
and chilly flakes.
Serves: 8 Triangular Bread Pizza Pieces
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
- 4 Bread slices, white / brown or multigrain
- ½ cup colored Bell peppers, chopped or sliced
- ¼ cup steamed Corn kernels
- Cheese as required, Regular, Cheddar or Mozzarella
- 1 tablespoon Butter
- Mixed dry Italian herbs as required for sprinkling
- Chili flakes as required for sprinkling
- Salt to taste
For Pizza Sauce:
- 1 Garlic clove, chopped
- 1 Onion, chopped
- 2 Tomatoes, chopped
- 1 tablespoon Olive oil
- ½ teaspoon black Pepper powder
- ½ teaspoon Chili flakes
- ½ teaspoon mixed dry Italian herbs
- Salt as required
Method:
- Take the bread slices. Apply little butter on both sides. Place them on a baking tray and toast them in a preheated oven at 180 degree Celsius for 8-10 minutes or until they turn golden. I have toasted them on a heated skillet (tava) using a stove top.
2. For the pizza sauce, heat 1
tablespoon oil in a pan. Add chopped garlic clove and saute for a minute or so.
To it add chopped onion followed by chopped tomatoes. Saute for 2-3 minutes on
medium flame.
3. Lower the flame and add black pepper powder, chili flakes, mixed Italian herbs and salt. Stir well and put off the flame. The pizza sauce is ready. (You can directly add the veggies in this sauce at this stage and saute for a while. I have not mixed the veggies in the sauce.)I have pulsed the pizza sauce in a grinder to
make it even and easy to apply. This step is optional.
4. Sprinkle little salt over the veggies. Mix well and keep aside.
5. Apply the ready sauce over
the toasted bread slices. Top it with veggies.
6. Sprinkle grated Cheese. I
have used regular Amul cheese.The bread pizza slices are ready to be baked.
Place the tray back in the oven and bake for 8-10 minutes at 200 degree Celsius
or until the butter melts.
7. If using a stove top option, place the ready slice on a heated and greased non stick skillet and cover cook on a low flame until the cheese melts.
8. Serve the bread pizza with Tomato ketchup , chili flakes and dried Italian herbs of your choice.
Notes:
- Toasting the bread slices is optional but it prevents the bread slices for turning soggy and gives good taste.
- Any flavored, multi-grain or plane bread can be used for making this.
- Baby Tomatoes, Mushrooms, Paneer , Olives, Baby corn can be added as topping to this bread pizza.
- I have used regular Indian cheese like Amul cheese. This cheese does not melt but becomes golden brown. You can use Mozzarella cheese if you desire stringy melted pizza. Cheddar cheese will give a melted and gooey appearance.
