Adai Dosa is a healthy breakfast recipe made from a mixture
of different lentils and rice. This protein rich and filling crepe can be
easily prepared in comparatively less time than the usual dosa , as this recipe
does not call for fermentation .One can serve this adai dosa for breakfast ,
lunch or even dinner. Goes well with butter and any chutney or avial.
I learnt this dish from one of my South Indian neighbor. She makes it quiet often for tiffin
and dinner and serves it to all her guests for sure. The recipe calls for
soaking the rice and different lentils (I have used Toor dal , Moong dal , Chana dal and
Urad dal) together for 3-4 hours and thereafter grinding it with some spices.
The batter so obtained can directly be used for making this adai dosa without
fermenting it. This dosa is soft and crispy at the same time and little thicker
than the usual dosa.
Preparation Time: Roughly 4 hours
Cooking time : 4-5 minutes per Adai dosa.
Serves: 5-6 medium sized Adai Dosa.
Main Ingredients:
- 1 cup - raw Rice
- 1/4 cup Tur dal / Pigeon peas split and skinned
- 1/4 cup Chana Dal / Bengal gram
- 1/4 cup Moong Dal / split and skinned green gram
- 1/4 cup Urad dal / split and skinned black gram
To be ground along with soaked rice and lentils
- 3-5 dried red chilies or as per taste
- 1-2 green Chilies
- 1/2 inch Ginger piece
- 3-4 cloves of Garlic
- 2 sprigs of Curry Leaves
- 1 tsp Cumin seeds / Jeera
- 1 tsp Fennel seeds / Saunf
- 1 tbsp Flax seeds / Alsi (optional)
Other Ingredients:
- 5-7 Shallots , finely chopped. ( I have not used)
- 1/4 tsp Asafoetida / Hing
- 1/4 tsp Turmeric
- ¼ cup fresh Coriander leaves
- Salt to taste
Method:
- Rinse the rice and lentils in running water thoroughly and soak them together in enough water for at least 3-4 hours.
2. Drain and grind them coarsely with the ingredients listed
under “To be ground along with soaked rice and lentils”.
3. The batter should not be too smooth or watery. Add little
water to the batter and make it little thin.
4. Add the hing , turmeric powder , salt and
chopped coriander leaves to the batter. Finely chopped shallots taste great in
this Adai dosa , add them at this stage.( I have not added as my son likes to
have this dosa without onions)
5. Mix well. The batter for Adai dosa is ready.
6. Pour a ladle full of batter in the center of the heated
skillet. Spread it in circular direction. You can make a thin or thick dosa as
per your likings.
7. Cook the adai dosa until crisp and golden brown from both
sides. Repeat the same with rest of the batter.
8. Serve the adai dosa hot with butter and any chutney of your
choice. I generally serve it with coconut chutney or Tomato chutney.
