Away from my home country on this special day, I am feeling all the more patriotic. Today I am missing the typical festive atmosphere on the day of Independence day in India , the early morning preparations to dress up in special tricolor or symbolic attire for the flag hoisting ceremony in school, colleges and work places , reciting the patriotic songs and National Anthem, saluting our Tiranga ( Tricolor Flag )with pride and respect, the family gatherings where entire family sit glued to the sofa sets to listen , the speech "Address to the Nation " delivered by our President, the cultural programs and competitions in schools and housing societies and much more. The whole nation is in a festive mood.
I was getting a bit nostalgic, so decided to give a patriotic feel to my food . Made quick and filling tricolor sandwiches for breakfast. These tricolor sandwiches are very easy to make and serve as healthy snacks, specially for the kids.
The orange layer of this sandwich is made with grated Carrot and Cheese and the green layer is Coconut based Mint chutney. You can also grate cottage cheese (Paneer) and mix with either carrot or Mint to make it more rich and healthier.
Ingredients:
For the Orange layer
- Carrot - 1 medium
- Cheese slices - 2
- Ground black pepper
- Salt to taste
- Fresh Pudina / Mint leaves -1/2 cup
- Scraped fresh coconut- 1/4 cup
- Small green Chili -1
- Ginger- 1/2 inch
- Garlic- 2 cloves
- 2 tsp lemon juice
- Salt to taste
Butter - 2 tbsp
Method:
- Take grated Carrot in a mixing bowl and add grated Cheese, salt and ground black pepper to it. Mix properly and set aside. The orange layer for tricolor sandwich is ready.
2. In a blender add all the ingredients of green layer and blend to make the green layer. You can replace Mint with Coriander if you wish to.
3. Apply Butter on the slices of bread. If you want, you can remove the edges of the slices. Now place a bread slice on a plate . Spread the Carrot dip on it evenly. Place a plain slice over it to form the white layer.
4. Apply green chutney evenly on the third bread slice and place it on the plain slice facing downwards.
5. Press all the layers gently and cut the sandwich length wise or into triangles. Serve immediately !
