I was browsing on Internet for some salads ideas for summer party where I came across stuffed Cherry tomatoes and they appeared very appealing , so thought of giving it a try. These colorful bite size treats are just apt for a summer party ! A simple recipe that can be made ahead of time. To enjoy the refreshing summertime appetizer stuff the fresh cherry tomatoes with savory filling made from Cucumber, Coriander and Cheese , seasoned with pepper and salt !
Cherry tomatoes are miniature versions of traditional beefsteak tomatoes, but are equally nutritious. 1 cup of cherry tomatoes gives 1.3 grams of protein , 1.8 grams of fiber, 20 milligrams of vitamin C and a healthy dose of other vitamins and minerals essential for good health. According to a 2010 article published in the " American Journal of Lifestyle Medicine" the compounds in Cherry tomatoes might offer protection against Osteoporosis, skin damage caused by ultraviolet light and brain disorders.

Ingredients:
- 12 Cherry Tomatoes
- 1/2 cup Peeled and chopped Cucumber
- 1/4 cup grated Cheese ( I have used cheese Slices)
- 2 tablespoon fresh chopped Coriander
- 5-6 black Peppercorn
- Salt to taste
Method:
- Cut a small portion off the bottoms of each tomato so they will sit on a tray without rolling. Slice off the tops of each tomatoes.
- Blend Cucumber with coriander and cheese , season with pepper and salt. Filling is ready.
3. Scoop out centers of the tomatoes with small spoon , discard the pulp and invert tomatoes on paper towels to drain. Using a small spoon, fill each tomato with about 1 teaspoon of the filling. Refrigerate until ready to serve. Remove from refrigerator 15 minutes before serving.
