Rose Lassi is a rose flavored sweet yogurt drink. Popsicle made from this lassi are delicious , refreshing , fragrant and perfect treats during summers. And most importantly these rose lassi pops require just 4 ingredients and they are oh so adorable..aren't they ? Rose lassi Popsicle are made using fresh curd/ yogurt and rose syrup , are soothing and act as summer coolants. Here i have made a layered Popsicle with plain and rose lassi to make it more appealing. Involve your kids in making these no cook pops for the added fun !
Flowers are said to be a language within themselves . A bouquet of fresh flowers or a single bloom from your garden given as gift can express your emotions that sometimes even words fail to. Rose is the traditional Valentine's day flower. It signifies love, warmth , affection. While roses are pretty to look at and sweet to smell , they can also be used in culinary use. Not only they make up for vibrant garnishes but they can actually make the food flavorful , delicious and fragrant. Rose petal jam or gulkand is been used in Indian kitchens since ages and it is my personal favourite too. I have made many dishes using gulkand. Today i have used rose syrup to add in the rose flavor and lend pink color to the classic lassi. I have used regular home made curd in the recipe, just to make it creamy and a bit thick , i have tied it in a cheese cloth and drained for 1 hour.
Preparation time: 15 minutes ( does not include the freezing time)
Cooking time: 0 minutes
Serves: 6 Small Popsicle
Ingredients:
- 1 1/4 cup home made curd ( hang it in a cheese cloth and drain for 1 hour )
- 1/4 cup milk
- 2 tablespoon honey
- 4 tablespoon rose syrup
Method:
- We will first make the rose lassi , for that in a bowl take 3/4 cup yogurt . Add the rose syrup and 3 tablespoon milk to it and whisk to get a creamy smooth rose lassi
2. Now to make the plain lassi , In another bowl take the remaining yogurt , 1 1/2 tablespoon milk and honey . Whisk to get a smooth cream plain lassi.
3. Fill the Popsicle molds with rose lassi upto 2/3 full. Freeze for 15-20 minutes until it becomes little hard , so that when we add the plain lassi , it doesn't mix with the rose lassi. ( to get a slant layer , i slightly tilted the Popsicle maker in the freezer..this step is purely optional)
4. After 20 minutes of freezing remove the Popsicle maker and fill the molds with plain lassi up to the top and freeze for another 15-20 minutes. Now insert the Popsicle sticks in the centre and freeze for 6 hours or more .
5. To un-mold the pops, just run the Popsicle maker under warm water for few seconds . Serve the flavorful and beautiful rose lassi Popsicle to your loved ones after a spicy meal or on a sunny afternoon as a refreshing and soothing treat !

DeleteI nearly made something with rose syrup as hubby loves it. However, I thought of something else as after all the syrup has sugar and right now trying to avoid refined sugar. Love the beautiful looking popsicles. Perhaps should make it for hubby... am sure he'll love it.
