Nutritious Soya and Veggie Burgers/ Healthy Kids Recipe

                  

Kids love burgers and home made veggie burgers are a healthier alternative to shop bought ones. Soy chunks and Paneer/ Indian Cottage Cheese add protein to the high fiber veggie patties and thus these burgers can be a part of healthy eating plan too! Use of whole wheat burger buns and addition of sprouts in the patties make them a nutrition powerhouse. What's more? The burger patties are shallow fried and not deep fried, also the recipe does not call for use of mayonnaise or cornflour. This dish is surely a great way to disguise vegetables . This Soya and Veggie burger is a quick snack that you can 'grab on the go' and enjoy without any guilt. Very easy to make, is healthy and full of flavor.

Ingredients for Burger Patties
  •        1/2 cup Soya Chunks/ Soybean badi (washed and soaked in warm water for 15 minutes)
  •       1/2 cup Boiled Potatoes, grated
  •       1/4 cup Grated Carrots
  •        1/4 cup Sprouts of your choice
  •     1 large Onion, finely chopped
  •       1/4th cup Blanched Green Peas and Sweet Corn
  •         1/4 cup Paneer /Indian Cottage Cheese, crumbled
  •         2 tbsp Roasted Besan/Sattu/ Gram flour
  •         1  tbsp Ginger garlic green chili paste
  •         1 tsp Garam Masala /Pav Bhaji masala
  •         1 tsp fresh Coriander leaves, finely chopped
  •      3-4 tablespoon Oil
  •         1/4 cup rice flour
  •          1/2 cup cornflakes
  •          Salt to taste

Ingredients for Hung Curd Spread:

  • 1/4 cup hung curd
  •  1 tbsp Olive Oil
  •  1 Tablespoon lemon juice
  •  1/2 tsp black pepper powder
  •  1 tsp mustard powder
  •  Salt to taste. 

Other Ingredients:

  •  6 Cheese slices
  •  6 Whole wheat burger buns
  • 2 tsp Butter -
  • 2 tbsp Tomato Ketchup
  •  2-3 tablespoon
  •  Salad (onion, cucumber, tomato slices, lettuce leaves) as per need



Method:
                                     

  1. Grate the paneer cubes, mince the soaked and squeezed soya chunks in a mixer.
  2. Add all the ingredients for patties  in a bowl , and make a dough of it.
  3.  Divide the patties mixture into 6 equal parts and make them into round balls and flatten in your  palms giving them the patties shape.
  4. Now on a heated skillet, add 1 tsp of butter and shallow fry the patties from both the sides until golden brown in color. 
  5. On the same skillet, now add the remaining 1 tsp butter and toast the sliced burger buns.
  6. Place the lower half of the bun on a clean dry surface and put a lettuce leaf , or cabbage or any salad of your choice followed by the patties,  cheese slice, tomato or cucumber slice and pile them one over the other an cover with an upper half of burger bun and put a tooth pick in the burger bun to hold all the layers in place. Serve with salad and sauce.

This is an old post that i had published in 2015 during my early blogging days. Today, i have updated the post with new pics, written content and video, the recipe remains unchanged though. I have many such old posts where i feel the photography is dull or the recipe is not up to the mark (at times we keep on changing our own recipes to make it a better version of it). Such posts need to be updated.   1. A healthy and protein packed burger. Generally I'm not a fan of soya sabji but don't mind enjoying it in burgers. Like how you've added lots of veggies too. You're right home made burgers are the best.

  2. A very healthy and delicious burger with soya and veggies loaded in this. I would love to give such wholesome meals to my kids and they would be perfect for lunch box treat or best for your travel too.
