Moorish Crunch Salad / Cooking from a CookBook


Summer has officially begun in my part of the world and it is time to switch over to light and refreshing meals and snack. Salads , fresh fruit juices and salsas are the best choices for summer. Moorish Crunch Salad is one such refreshing and flavorful salad to treat ones taste buds. Made using a handful of simple and easily available ingredients from your kitchen pantry, this salad is oil free and can be pulled together within 10- 15 minutes. Moorish crunch salad makes up for a nice side salad or can be served with barbecue. I love munching this salad as a healthy snack.


I have adapted this recipe from a beautiful cookbook , the Jamie's Kitchen part 4 . The author of this cookbook , Jamie Oliver is a British celebrity chef and restaurateur. The cookbook is a collection of  doable scrumptious recipes , with well explained cooking techniques and wonderful tips. This cookbook was gifted to me by #BetterButter for winning one of the online cooking contest. I love reading cookbooks and mostly use them as reference while cooking recipes from different cuisines. Many a times, just by looking at the attractive pictures of the dishes in the book , i get tempted to try out the dish. Cookbooks are inspiring and can cover a wide variety of topics, including cooking techniques, recipes, tips from chefs and can be a good learning guides.
                                     
#Cooking from a CookBook is the theme for our #135th week on #FoodieMondayBlogHop and this refreshing #Moorish Crunch Salad from Jamie's Kitchen , cookbook is my contribution towards this theme. I have made few changes in the recipe .The original recipe calls for use of olive oil and red wine vinegar , i have skipped both and added little orange juice instead. Red radish also known as table radish are used in making this salad along with apples and carrots. Red radishes contain vitamin C, folate, fiber and potassium. They also contain active enzymes known to aid in digestion. Fresh herbs like coriander and mint make the salad flavorful. Raisins and cranberries make the salad all the more healthier and filling. Toasted sesame seeds lend a wonderful nutty flavor to the salad.


Preparation time: 10 minutes
Cooking time: 4-5 minutes
Serves: 2

Ingredients:
  • 2 carrots 
  • 1 apple 
  • 2-3 table radish
  • 2-3 tablespoon freshly squeezed orange juice
  • 2 tablespoon sesame seeds
  • 1 tablespoon raisins
  • 1 tablespoon cranberries
  • Small bunch of fresh coriander leaves
  • Handful of mint leaves
  • Juice from 1 lemon 
  • Salt to taste
  • Black pepper to taste


Method:

  1. Start with toasting the sesame seeds in a skillet on low flame for 4-5 minutes . Take care not to burn the seeds.

 2. Slice the carrots into matchstick - sized batons or simply grate the peeled carrots coarsely. Slice the radish thinly. Quarter the apple, remove the core and finely slice. squeeze out juice of 1 lemon into a bowl of water. Immerse the apple slices into it. This step ensures the apple does not turn brown.
Chop the coriander leaves. Squeeze out juice from orange. We will be using just 2-3 tablespoon of it.


3. In a large mixing bowl combine all the ingredients except the toasted sesame seeds . Mix everything very well using forks. Check for seasoning and add salt or black pepper if required.



 4. At the end add the toasted sesame seeds , garnish with mint leaves and serve the refreshing moorish crunch salad , either as a side dish or with barbecue.

  7. Poonam, Jamie Oliver is one of my favorite chefs. Though I don't have any of his books, I've sat watching his cooking shows on telly and jotted down so many easy to follow recipes. He makes cooking fun. The salad looks very delectable. Love simple but tasty salads.

  11. This salad looks delightful and I simply love the picture! Even though, I am a die-hard Gordon Ramsey fan, I have tried a couple of Jamie Oliver's Christmas recipes last year! He is such a humble and good-natured chef and his recipes are fantastic! Loved this salad to the hilt! :)
