Gulkand Paneer Kheer / Rose Petal Jam Flavored Cottage Cheese Pudding


Gulkand Paneer Kheer is a delectable, aromatic Indian dessert. This flavorful pudding is made with cottage cheese , milk and dry fruits. Here, i have used Homemade Gulkand - Rose Petal Jam which acts both as a flavouring agent and a sweetener. As no other sweetener is added to the kheer, it is relatively guilt-free. Gulkand Paneer kheer is one of the easiest desserts that can be made in a jiffy and served both hot or chilled.Can be made on special occasions or festivals or just to satisfy some sweet cravings. This serves as an ideal fasting food as well.


Preparation Time: 5 minutes
Cooking Time: 20 minutes
Servings: 3-4

Ingredients:
  • 2 cup full cream milk, boiled
  • 1/2 cup crumbled paneer /cottage cheese
  • 2 tablespoon Gulkand / Rose Petal Jam ( click on the highlighted words for the recipe)
  • 2 tablespoon raisins
  • 2 tablespoon cashew nuts
  • 2 tablespoon pistachio
  • 2 tablespoon dried rose petals
  • 1 tablespoon ghee
  • 1/4 teaspoon cardamom powder
Method:
  1. In a wok heat ghee on low medium flame. Add the raisins and cashew nuts to it and fry for a minute or so. Add full cream milk to it and allow the milk to boil. Now simmer and let it cook for 7-10 minutes. Keep stirring occasionally.



2. Add grated paneer and gulkand to the reduced milk. Stir well and allow it to cook for another 3-5 minutes. The kheer will thicken and get beautiful color and aroma due to the added gulkand.


3.Once the kheer is creamy and of the desired consistency, put off the flame. Add cardamom powder and garnish the kheer with chopped pistachio and dried rose petals. Serve warm or chilled.

  • Christmas Bakes: For many people, it is not Christmas without fruit cakes and cookies. Here is a compilation of 30+ egg-less bakes which includes, cake, muffin, cookie, and doughnut recipes to try out this Christmas season.

1. Christmas Fruit Cake: An egg-less, butter-less Christmas fruit cake with whole wheat flour. Alcohol-free, refined sugar-free and best part is that it does not require pre-soaking.

2. Plum Bundt Cake: Another healthy bake which is butter free, refined flour and refined sugar-free. Here the dry fruits and nuts are soaked in apple and orange juice and the caramelized jaggery imparts the cake a beautiful color. The orange and lemon zest add into the taste and aroma, making every bite of this cake a blast of flavors.

25. Egg-less Butter-less Pineapple MuffinsThese Muffins are Egg-less and Butter-less and are made from whole Wheat flour. The Cupcakes turned out very moist and soft. 
26. Carrot MuffinsThese Carrot muffins are eggless, butterless and to make it a healthier affair, I have replaced the all-purpose flour with whole wheat flour and added chopped almonds to them.

27. Orange MuffinsMade from whole wheat flour these orange muffins are egg and butter free and have bold flavors of orange due to use of orange juice (rather i would say orange pulp) and orange zest. I have used powdered jaggery as a sweetener in these muffins. The orange muffins turned out to be moist, soft and deliciously sweet with bold citrus flavors in it. 

28. Egg-less Butter-less Choco MuffinsThese Choco Muffins are Egg-less and dairy free. The recipe is very easy to follow and all the ingredients are easily available in our kitchen pantry. The use of whole wheat flour instead of maida and oil instead of butter makes it all the more healthier.
