Strawberry Banana Oat Bars


Strawberry Banana Oat Bars are the best every breakfast bars with healthy goodness of oats and fresh fruits. Ripe banana and oats flavored with cinnamon form the base of the bars over which a sweet  filling of strawberry chia spread is added. The top crust is made using oats and dry dates and then the bars are baked until crust turns golden brown. These Strawberry banana oat bars are soft , chewy and flavorful. Best part is that they are vegan and gluten free. The strawberry banana oat bars are refined sugar free and easy to make. 



 The Strawberry banana oat bars can be had as a healthy breakfast or packed in kids snack box . They even makeup for good travel or picnic food. The sweetness of the ripe bananas compliment very well with the tartness of strawberries. I have roughly adapted the recipe from here and made few changes in the original recipe taking into consideration the taste of my family. The recipe yields 8-10 squares depending upon the size of the squares. The bars stay good for a day or 2 at room temperature and up to a week on refrigeration.

Preparation time: 15 minutes
Cooking time:40 minutes
Serves: 8-10 squares

Ingredients for Strawberry filling: Measurement used 1 cup = 200ml
  • 1 cup fresh strawberries, washed, hulled and chopped
  • 2 tablespoon jaggery powder / maple syrup
  • 1 tablespoon chia seeds
  • 2 teaspoon cornflour.
  • 1 tablespoon lemon juice.
For the base and crust :
  • 1 3/4 cup oats (instant)
  • 2 small or 1 large banana
  • 1/4 cup dry dates, powdered
  • 1 teaspoon cinnamon powder
  • 1/4 cup olive oil or coconut oil




  Method:
  1. To make strawberry spread, in a sauce pan take jaggery powder, chia seeds and chopped strawberries. Allow to cook .Once the jaggery melts and strawberries turn mushy, dissolve 2 teaspoon cornflour in equal amounts of water in a small bowl and mix well. Add this to the strawberry mix. The cornflour helps the spread to thicken slightly. Cook for 1-2 minutes more and put off the flame. Allow the strawberry spread to cool down completely before using in the recipe. You may prepare this spread a day before making this bar .




 2. Mean while we can make the base for the bars. For that reserve 1/4 cup oats for the top crust and add the rest to a grinder jar. Pulse to get oatmeal (powdered oats). To this add the ripe banana , cinnamon powder and oil and pulse again for 4-5 times . The mix will be sticky and a bit dry but it should be uniformly blended .



 3. In a bowl mix the powdered dry dates and oats. Mix well and keep aside until use. Line a  baking pan with a parchment paper or grease it and preheat the oven at 180 degrees Celsius. 


  4. Scoop out the oats banana mix and spread it at the base of the baking pan in an uniform layer. Cover the layer with strawberry spread. Now cover it with the top layer of oats and dry dates. Press the layers and bake for 25-30 minutes in a preheated oven at 180 degrees Celsius. 






  5. Allow the baking pan to cool down before cutting into squares . Serve these healthy strawberry bars with loads of love or refrigerate it until use.
